How to Choose a Wedding Cake
The cake is more than just a dessert for your wedding -- it’s the centerpiece of your reception. Imagine going to a bridal show where you get to see
all of the greatest wedding vendors showcasing their best work, rather than
only getting to see their talent you get to experience it as you would at an actual
wedding!
This is the concept of The Not Wedding where brides to be get to be
guests at a fake wedding. The Not
Wedding made its premiere here in San Diego this month at the incredible event
venue The New Children's Museum and was headed up by the talented Couture Events
team.

showcase our fine cuisine at this fun and innovative show!

Spring
has just arrived and that means wedding season is kicking off and we couldn't
be more excited!
With the many great weddings we have coming up this year,
Authentic Flavors Fine Catering & Events wanted to give those newly engaged
the opportunity to taste what we're all about at the recent Hotel Del Coronado
Wedding Show.
Being a full service
caterer with an in house bakery we thought we'd show off a few of our gourmet desserts.
Partnering with Kathy Wright & Co. as well as The Invitation Factory,
Bouffant Hair, APR Fine Linens, Hire Elegance and Classic Party Rentals in the
"high tea" area we invited guests in to have tea with the queen and
her friends and enjoy desserts such as our mini white chocolate crusted fruit
tartlets, bite sized caramel dipped and sugar coated apples and crème brulee cheesecake bites.
The show was a great success and co-owner,
Justin Fitzgerald, had the delight of meeting luxury wedding extraordinaire
Grace Ormonde and discussing exquisite weddings with her.
Maserati

Flavors Fine Catering & Events had the privilege to partner with Maserati
for their launch event, unveiling the luxurious, newly re-designed
Quattroporte.
VIP Guests sipped champagne & wine as they enjoyed
savory hors d'oueuvre, such as petite seared filet mignon on truffled polenta
and duck confit risotto bites.

Louis Vuitton VIP Event at Neiman Marcus
Authentic Fine Catering & Events was selected to cater the Louis Vuitton VIP event at Neiman Marcus on November 8th. Guests enjoyed savory treats including:
- Smoked Salmon Rosette on artisan brioche with Lemon Crème fraîche
- Caviar
- Sesame seared Ahi on top of a Wonton Crisp with Soy Aioli, Ginger, Cucumber, Diakon Sprouts and Orange Zest
Neiman Marcus also recently launched
their new CUSP department on October 25th at Fashion Valley Mall. As
shoppers browsed through the new fashion, they were treated to delicious bites
from Authentic Flavors Fine Catering & Events such as:
- Cherry Tomato 'Globes' with Basil and Mozzarella Brunoise
- Key Lime Cheesecake bites.

Wedding Cheese Boards
California is one of
the best cheese producers in the country, so why not celebrate about it in your
wedding menu? A cheese board is a great addition to, or even alternative to,
your dessert course.
Here are some tips for a great cheese board:
- Choose a
variety: The best cheese boards have a wide selection of cheese types. Include
strong and mild, soft and hard.
- Include
other foods: While a traditional cheese board might only have cheese, your
guests might appreciate having crackers and fruit to go with the cheeses.
- Include
descriptions: If you’re having waiter service, make sure they know some details
about everything. If you’re having one per table, have the boards labeled with
some basic information about where the cheese was produced and what the flavor
is like.
- Make sure
there are vegetarian options: Many types of cheese aren’t suitable for vegetarians.
You don’t need to have soy cheese, but do make sure there is one or two cheese
types that your vegetarian guests can enjoy.

- If
